If you're talking about the version of Java installed with the Operating System, take a look at this link <http://developer.apple.com/java/faq/#remove>. Among other things the advice on this page indicates that in order to revert to an earlier version of Java you would have to re-install the operating system. Also, Java is integrated as part of the OS so I don't think it would be advisable to uninstall. Good luck.

Java updates are part of the Software Updates that Apple provides directly. As such it cannot be uninstalled without completely erasing your computer and reinstalling the system.
Instead of doing this, though, all you should need to do is open Applications and drag and drop the Limewire icon onto the trash, the go to Limewire.com, download the latest version, and reinstall Limewire.
